Khatta-Meetha Nimbu Mushroom Stir-Fry is a perfect example of how two seemingly different flavours can create an unexpected delicacy. The combination of mushroom stir-fry and khatta-meetha nimbu pickle gives this fusion recipe a desi twist, bringing together earthy mushrooms, aromatic spices and the punch of Indian pickle.
The star condiment here is khatta-meetha nimbu pickle, a flavour-packed Indian preserve known for its balance of sourness, sweetness, saltiness and spice. Lemon pieces, spiced masala and infused oil blend with the mushrooms to give the dish its distinctive flavour.
At its heart, this is still a comforting mushroom stir-fry. Mushrooms bring an earthy, savoury flavour and a soft, juicy texture, while onion, garlic, ginger and capsicum add aroma, sweetness and crunch. The result is savoury, sweet and mildly spicy with every bite.
Ingredients
Makes approximately 2 servings.
- Button mushrooms – 200 g
- Onion – 1 medium, thinly sliced
- Capsicum – 1 small, thinly sliced
- Garlic – 3–4 cloves, finely chopped
- Ginger – 1 small piece, finely chopped or grated
- Green chilli – 1, finely chopped
- Cooking oil – 1½ tbsp
- Cumin seeds – ½ tsp
- Turmeric powder – ½ tsp
- Coriander powder – ½ tsp
- Red chilli powder – ¼ tsp, or to taste
- Black pepper powder – ¼ tsp
- Salt – ¼ tsp, or to taste
- Khatta-meetha nimbu pickle – 1–1½ tsp
- Sugar – ⅛–¼ tsp (optional)
- Fresh coriander – 1–2 tbsp, chopped, for garnish
Preparation method
Prepare the mushrooms
Rinse the mushrooms and wipe them clean with a damp cloth. Avoid soaking them in water so they do not become too soft. Trim the bottom of the stems if they look dry or dirty. Slice each mushroom into 3–4 medium-sized pieces and set aside.
Prepare the vegetables
Chop the onion, capsicum, garlic, ginger and green chilli and set aside.
Heat the pan
Place a frying pan or kadai over medium heat and add 1½ tbsp oil. Let it heat for 30–45 seconds without smoking.
Add the aromatics
Add ½ tsp cumin seeds to the hot oil. Once they begin sizzling, stir for 10–15 seconds until aromatic. Add the ginger, garlic and green chilli and stir for 30–45 seconds, taking care not to let them burn.
Add the vegetables
Add the onion, capsicum and mushrooms. Stir-fry for 2–3 minutes over medium heat. Do not add water; mushrooms release moisture as they cook.
Add the spices
Once the mushrooms begin to shrink, add the turmeric, coriander powder, red chilli powder, black pepper and salt. Mix well to coat the mushrooms and cook for another 2–3 minutes.
Let the ingredients fry
Increase the heat slightly to medium-high. Spread the mushrooms out in the pan rather than piling them up. Cook for another 2–3 minutes, stirring occasionally.
Add the khatta-meetha nimbu pickle
Once the mushrooms look glossy, add 1–1½ tsp khatta-meetha nimbu pickle. Reduce the heat to low-medium and mix it through evenly.
Finish and serve
Gently toss the mushrooms for about 1 minute over low-medium heat. The pickle is already prepared, so it only needs enough heat to blend into the stir-fry. Garnish with freshly chopped coriander and serve.
